EASY CHICKEN CURRY

Delicious Chicken Curry

What You’ll Need:

  • 10 chicken drumsticks (or other cuts)
  • 3 cloves garlic
  • 3 med. potatoes
  • 2" piece fresh ginger
  • 4 tbsp. curry powder (or more if desired)
  • 8 oz. sour cream
  • 2 lg. cooking onions
  • Add salt to your liking
  • 5 tbsp. cooking oil
  • 1 c. water

How To Cook It:

Slice the cooking onions, ginger and garlic in pieces. Place them into a food processor and mince finely. Skin and slice the 3 medium potatoes into quarters. Combine the curry powder with some water – mix until you have paste. Heat oil in a non-stick Dutch oven. Stir-fry the minced onion mixture for several minutes.

Next, add the curry paste and stir-fry. Mix them for 2 minutes. Add the potatoes and chicken and mix well. Cover and cooked for a few minutes.

Next add water and sour cream and mix well. Bring everything to a boil. Cover and reduce heat to simmer for about 30 minutes. Remember, curry will taste better when it’s prepared ahead and served later with a thick whole meal bread or hot rice.
